Stuffed Eggplant Recipe

In Morocco and the Middle east, eggplant is stuffed with different kinds of fillings and cooked in different ways. If you’re serving it as an appetizer or side dish, you would use a simple filling depending on your taste.



Stuffed Eggplant Recipe:


Ingredient: 
2 large eggplants
200g of minced meat
50g of parsley
1 cut onion
Garlic cloves
250ml of tomato juice
1 teaspoon of black pepper 
(If you like it spicy you can add a bit of red pepper too)
1 teaspoon of salt
1 teaspoon of saffron
1 tablespoon of chamomile
1 teaspoon of cumin
1 teaspoon of olive oil
How to prepare the Stuffed Eggplant Recipe:


In the pan put one teaspoon of olive oil, after 5 minutes add the cut onions, and the garlic cloves.











Add the minced meat and parsley.














After ten minutes add half of the tomato juice.
Cooking time is 15 minutes.












Cut the eggplant in half lengthwise. Then with the help of teaspoon take out the inner part of the eggplant and Wash the eggplants with salt very well.

Then put the stuffing in the eggplant, as you see in the photo.







In the oven-tray add the tomato juice.












Add the stuffed eggplant.













Add a touch of parsley and a touch of cheese (Any type you like).
Cooking time is 20 minutes 
Temperature is 170C°/338F°









Serve warm. You can eat Stuffed Eggplant with Bulgar or garlic yogurt sauce as well, but it can be a main dish in itself too. This is one of my favorite Moroccan eggplant dishes.








Tomato and Feta Cheese Salad

I usually only prepare this salad doing the summer, when I'm in the mood for something light, cooling and refreshing.



Fresh Tomatos and Feta Cheese Salad:
Ingredients:
2 cut tomatoes
2 cucumbers
100g of feta cheese
A pinch of salt
A pinch of cumin
A pinch of black pepper
A few drops of olive oil

 


How to prepare the Fresh Tomato and Feta Cheese Salad Recipe:
In the serving dish, put in the center the cut tomatoes; then add a pinch of salt, a pinch of black pepper, a pinch of cumin and a few drops of olive oil, then stir gently. Add the cucumbers and feta cheese, as you see in the picture.
Tomatoes are rarely more delicious than when served with feta cheese and olive oil. This salad, is popular in Greece and Turkey, is enjoyed as a light meal with pieces of crispy bread.

Roast Hamour Fish with Roast Vegetables in the Oven



  What's a better way to roast hamour fish  than to surround it with a variety of fresh vegetables and flavor it with lemon juice and spices?
It's always nice to eat roasted vegetables when it's a bit hot. We always make this to make a light dinner which is healthy and simple to make, because oven does all the work for you.
This recipe is very easy to make and you can add as many vegetables as you like and that it takes less time to cook.



Roast Hamour Fish with Roast Vegetables in the Oven Recipe:

Ingredients:

1 big hamour fish
2 carrots sliced
1 potato sliced
2 tomatoes sliced
1 green pepper sliced
50g of parsley
1 teaspoon of salt
1 teaspoon of saffron
1 tablespoon of chamomile
1 teaspoon of cumin
1 teaspoon of black pepper
(If you like it spicy you can add a bit of red pepper too)
A few drops of oil

How to prepare the Roast Hamour Fish with Roast Vegetables in the Oven Recipe:

First take the oven - tray and put the carrots sliced.















Add the potato sliced.














In the dish put the hamour fish; add the parsley, spices and a few drops of oil.
Then mix them very well.













Put the hamour fish on top of the slices of potato and carrots.















Add slices of tomatoes and green pepper.













Add a touch of parsley and spices. Then put the oven tray in the oven for 1h and 15 minutes.

Temperature is 170C°/338F°

Easy and Simple Dinner: Spaghetti with Meatballs.


Spaghetti with Meatballs Recipe.

Ingredients:
250g of spaghetti
2 small onions
50g of parsley
250g of meatballs
1 teaspoon of black pepper 
(If you like it spicy you can add a bit of red pepper too)
1 teaspoon of salt
1 teaspoon of saffron
1 tablespoon of chamomile
1 teaspoon of cumin
1 teaspoon of olive oil

How to prepare the Spaghetti with Meatballs Recipe:

 First, boil your favorite spaghetti.














In the pan, put on teaspoon of olive oil then after 5 minutes add the cut onions. 











Add the parsley and spices.












Add the meatballs.












After ten minutes add the tomato juice.
Cooking time is 20 minutes on medium heat on the stove.










Take the boiled spaghetti; add the meatballs and a touch of cheese depending on your taste.

Steamed Lamb Recipe

Looking for a simple yet delicious steamed lamb? Try this steamed lamb with cucumbers.



Steamed Lamb Recipe:



Ingredients (For 4 people):
1kg of lamb
4 small onions
6 garlic cloves
Bunch of parsley
1 teaspoon of cumin
1 teaspoon of black pepper
1 teaspoon of salt







How to prepare the Steamed Lamb Recipe: 


Take the pressure cooker, put a bowl of glass (we put it in a way that inverted, as you see in the picture).
Then add 500ml of water.








Take aluminum refinery, Then put it on the glass bowl.











Add the lamb (You can choose any type of meat you like).











Add slices of onions, garlic cloves and a bunch of parsley.












Then add spices.
Cooking time is 1h and 15 minutes on medium heat on the stove.










That’s it! Simple, delicious and healthy!
