Moroccan Tagine with fish and Vegetables

Moroccan Fish Tagine (Arabic name is  طاجين  السمك) one among the most important meals, known and consumed by the Moroccans and North Africans.
Tagine can be made with; chicken and vegetables, beef and vegetables or fish with vegetables,


Ingredients:
500g of Kingfish (any type of fish you desire)
4 pieces of carrots cut in circles
1 large tomato cut in circles
1 large green pepper cut in circles
50g of parsley
7 cloves of garlic
Teaspoon of black pepper (If you like it spicy, you can add a touch of red pepper).
Teaspoon of ginger
Teaspoon of cumin
Teaspoon of saffron
A few drops of oil
A few drops of lemon juice

How to make the Moroccan Fish Tagine with fish and Vegetables:


Put the fish in the tagine on medium heat on the stove, and then add the spices, a few drops of oil
A few drops of lemon juice.


After 5 minutes on the stove, add the rounded shape carrots.


Add the circles of green pepper.



Add the rounded shape tomato.


Add a touch of parsley.


Add a touch of spices (Teaspoon of black pepper (If you like it spicy, you can add a touch of red pepper) teaspoon of ginger teaspoon of cumin teaspoon of saffron).


Cooking time is 45 minutes.

My favorite tagines are the slightly sweet ones with dates, prunes, apricots and the different types of nuts that are added toward the end of the cooking time. There is also a wonderful Lamb Tagine With Apricots, Olives and Buttered Almonds. There is also a really nice minced beef tagine with wonderfully tasting preserved lemons which are very easy to make yourself.

This book will also give you enough inspiration to experiment with different ingredients since you'll find the extensive index to be extremely helpful.

The recipes are superb. Wonderfully easy to put together and you don't have to make or purchase a ton of condiments before you have a chance to play with them.

Yummy!! Definitely great comfort food during winter. And don't forget the couscous!

Summer Salad

Nothing is better than a vegetable salad for a picnic at the beach. Party or on a mountainside. Need a little boost to your salad vegetables? These recipes may help you!


How to Make the Summer Salad
Ingredients:

2 medium beets
2 medium tomatoes
2 medium potatoes
2 medium carrots
6 slices of lettuce
1 egg
200g of rice
100g of tuna
50g of parsley
Teaspoon of cumin
Teaspoon of black pepper
Teaspoon of salt
A few drops of olives oil.
How to make the summer salad:


First; boil the cut beets, cut carrots, and the egg. Then cut the tomatoes as you see in the picture, add a touch of parsley, a pinch of cumin and a pinch of salt.


Boil the potatoes then add a touch of parsley, a pinch of cumin and a pinch of salt.


Boil the rice then add the fresh tuna a touch of parsley, a pinch of cumin, and a pinch of salt and mix all well.


In the serving dish put the slices of lettuces. 


Add the mixture of rice in the centre of the serving dish as you see in the photo.


Then add the vegetables in the sides of the serving dish as you see in the photo.
Then add a touch of parsley, a pinch of black pepper and a few drop of olive oil.
